New restaurant in Warner Robins offers flavorful Indian-Italian fusion pizza
When diners step inside Slice & Spice in Warner Robins, the distinct aromas of Indian spices waft through the air.
The new pizza place at 4027 Watson Blvd., Suite 110, offers a desi twist with its signature fusion pizza and other offerings.
“It’s an Indian-Italian fusion,” owner Kirti Bhullar explained. “Basically, a concept of pizza — Italian New York style pizza with an Indian twist.”
Bold flavors in every bite
The New York style crust for the pizzas comes from dough that’s made fresh daily in-store with Bhullar’s special recipe and then fermented for 48 hours.
The fusion comes with the addition of Indian gravies such as butter masala sauce instead of a basic marinara sauce, either chicken or vegetarian paneer, cheese and then garnishes used in Indian dishes such as Kasuri Methi and roasted cashews.
“So everything is built on flavor as you take a bite,” Bhullar said. “If you go to an Indian restaurant and you order butter chicken, you’re going to get that base gravy that’s our base of the pizza, and then you’re going to have the chicken or paneer that goes inside of it.
“And then sometimes they put cashews or toppings on top, and then they’ll put the drizzle of makhani sauce on top. And it’s the same thing … If you can order it on an Indian restaurant, it can be put on a pizza.”
Slice & Spice offers eight Indian specialty pizzas in 12 inch and 16 inch sizes.
At a friends and family event prior to the three-day grand opening that started Friday, guests had the opportunity to sample the Indian specialty pizzas.
Of those tasted, the Palak Princess offered a bite of creamy deliciousness. The pizza is made with choice of chicken or paneer, white sauce, cheese, sauteed spinach, red onions, green chilies, feta, and fresh cilantro.
The Achari Affair offered a tangy flavorful bite of goodness. The pizza is made with choice of chicken or paneer, Archari (pickled) sauce, cheese, red onions, bell peppers, green chilies, garlic and fresh cilantro.
The restaurant also offers seven traditional pizzas with a twist in 12 inch and 16 inch sizes.
The Hungry BullDawgz is made with red sauce, cheese, bacon, ham, Italian sausage, pepperoni and fresh basil.
The Belly Buffalo Buster Triple “B” pizza is made with white sauce, cheese, buffalo sauce and crispy chicken.
More fusion dishes to explore
The restaurant also offers wings and loaded fries infused with Indian flavors and spices such as tandoori wings and butter chicken fries that are topped with cheese, butter chicken makhani, fresh cilantro, mint chutney and red onions.
The “Not Your Mother’s Samosa” is kind of a merging of empanadas and samosas to create a good blend, Bhullar explained.
“It’s the empanada base, and then you have either butter chicken filling with cheese in it and you close it up and you fry it to get the crispy outside with that chicken cheesy filling inside of it with a makhani sauce to dip it in … or it’s going to have the potatoey base with the paneer … for vegetarians,” she said.
To finish off a meal, the restaurant offers a Gulab Jamun Dessert Pizza, a fusion of the popular Indian dessert and pizza.
The dessert pizza is currently not shown with the eight Indian signature pizzas on the menu board to distinguish it as a dessert.
Everything is made fresh daily.
Indian drinks such as mango lassi, Indian sodas like Limca, Thums Up are also served, as well as regular Coca-Cola products.
Once the restaurant gets its state alcohol beverage license, Bhullar expects to offer Indian and domestic beer as well as house wine.
All in a name
When choosing the name Slice & Spice, Bhullar wanted to give a nod to 7 Spices Authentic Indian Restaurant and Bar, which she and her husband, Ishtpreet Bhullar, who goes by Jay, own. She also wanted to showcase her specialty, the fusion pizzas.
7 Spices is located in the same shopping center as Slice & Spice.
Already well versed in Indian cuisine, Bhullar added dough and pizza making to her skills. She attended a three-day, one-on-one class at the Pizza University & Culinary Arts Center in Beltsville, Maryland.
Bhullar created all of her signature Indian pizzas, experimenting with different spices and toppings until she achieved her mouth-watering creations.
Her daughters, Nanki, 13, Bani, 9, and Raavi, 7, who were often torn between Indian cuisine and pizza, are the inspiration behind the new restaurant.
Also, the former emergency room trauma nurse came across restaurants offering Indian-Italian fusion pizza and wings on her journeys as a traveling emergency room/trauma case manager.
Bhullar initially expected to transition from nursing to pizza making but has since decided to pursue the best of both worlds by blending them.
She plans to run her restaurant and work as a traveling ER/trauma case manager while pursuing her master’s degree in nursing informatics.
“I think nursing has not let me go, so I’m still balancing both of them,” Bhullar said ahead of the restaurant’s grand opening.
“As this gets up and running this week, the whole goal is to focus strictly on this. But when my patients need me … I’ll be there.”
When diners arrive at Slice & Spice, they go to an order counter and pay for their selections. They may dine-in with comfortable seating for up to 30 people, or get their order to go.
