Macon restaurateur Cesare Mammarella has hired a new executive chef.

Michael Wright will oversee kitchen and food operations for Hot Plates Group, which operates Tic Toc Room, Bearfoot Tavern, Brasserie Circa, Ginger Stir-Fry & Grill and Yabu Sushi.

Wright has served as executive chef at Atlanta-based restaurants Chops and Buckhead Diner.

“He comes with extraordinary experience and ability,” Mammarella said. “I feel this will again raise the bar for all restaurants in Middle Georgia, having someone of his stature.”

In Wright’s 21 years cooking, he also helped Mammarella launch Tic Toc and the former Luigi’s Bistro years ago.

He said he is returning with a simpler approach to great food.

“If I can source the best ingredients possible and cook them up properly and get them on the plate like that, you don’t have to do anything else,” Wright said.

Wright plans to create new seasonal menus in the coming weeks.
