4 egg yolks
1 cup confectioners’ sugar
1/2 pound (2 sticks) unsalted butter
1/3 cup Kahlua (coffee flavor liqueur)
1 baked and cooled 9-inch graham cracker or pastry pie shell
1 ounce Amaretto (almond flavor liqueur)
Whipped cream and chocolate shavings (optional)
Makes 12 servings.
Have pie ingredients at room temperature. Beat egg yolks, confectioners’ sugar, butter and Kahlua on high speed with an electric mixer for 10 minutes.
Meanwhile, thinly slice the banana and layer it on the bottom of the pie shell. Sprinkle on Amaretto and let it soak into crust. Spread filling evenly over bananas and refrigerate 2 hours, until set. Serve with whipped cream and chocolate shavings if desired.
