Kathy's Caesar dressing

1 cup light mayonnaise

5 tablespoons egg substitute

1/4 cup grated Parmesan cheese

2 tablespoons water

1 tablespoon olive oil

2 tablespoons fresh lemon juice

1 tablespoon anchovy paste

2 cloves garlic, minced

2 teaspoons Splenda

1/2 teaspoon coarse ground pepper

1/4 teaspoon salt

1/4 teaspoon dried parsley flakes, crushed fine

Makes 2 cups or 16 2-tablespoon servings.

Combine all ingredients in a medium bowl. Use an electric mixer to beat ingredients for about 30 seconds. Cover bowl and chill for several hours before serving so that flavors can develop.

Per 2-tablespoon serving: 69 calories, 6.3 fat grams, 2 carb grams, 178 mg sodium, 4 mg cholesterol, no fiber, no protein.
