Chocolate peanut butter cups

Cooking oil spray

1 cup peanut butter (any type)

1/4 teaspoon salt (optional)

1/2 cup confectioners' sugar

1 (12-ounce) bag chocolate chips

(any type)

Makes 12.

Spray a 12-cup regular (or 24-cup mini) muffin tin with oil (or use nonstick pans). Beat peanut butter with salt and confectioners' sugar. Melt chocolate chips in microwave on medium power, stirring every 30 seconds. Spoon about 1/2 inch melted chocolate into each muffin cup and spread about halfway up the sides. Place in freezer to harden.

Form peanut butter dough into 12 balls. Flatten slightly and place on top of hardened chocolate in tin. Soften remaining chocolate in the microwave and spoon on top. Chill to harden.
