Roasted red pepper tahini

Roasted red pepper tahini

2 tablespoons sesame tahini

2 tablespoons tomato paste

1 (7-ounce) jar roasted red

peppers, drained well

6 leaves fresh basil, torn

into pieces

2 cloves garlic

2 teaspoons smoked paprika

1/4 cup extra-virgin olive oil

Juice of 1 lemon

Salt, to taste

Makes 10 to 12 servings (1-1/2 cups).

Place all ingredients in a food processor fitted with the metal blade and process until smooth. Chill 20 minutes before serving.

Per (2-tablespoon) serving: 67 calories, 84 percent calories from fat, 6 grams total fat, .89 gram saturated fat, no cholesterol, 2 grams carbohydrates, .42 gram total fiber, .83 gram total sugars, 2 grams net carbs, 1 gram protein, 54 milligrams sodium.
