Cooling avocado gazpacho salad

1 ripe avocado, peeled, pitted and chopped

1 cucumber, peeled, seeded and chopped

1/2 red bell pepper, cored, seeded and chopped

1/2 green bell pepper, cored, seeded and chopped

1 medium tomato, chopped

1/4 small red onion, chopped

1 clove garlic, minced

1 small jalapeno, seeded and chopped

Juice of 1 lime

2 teaspoons extra-virgin olive oil

1 tablespoon minced cilantro

Salt, to taste

Makes 2 servings.

Combine all ingredients well in a large mixing bowl and serve.
