1 teaspoon salt
6 large eggs
1 cup canola oil
1 teaspoon vanilla extract
1 teaspoon almond extract
12 oz. semi-sweet chocolate morsels
1 1/2 cups coarsely chopped walnuts (optional)
Makes 24 medium size brownies.
Preheat oven to 350 degrees. Grease a 13-by-9-by-2 inch baking pan. Alternatively, line pan with a sheet of baking parchment, pressing seams in corners so that the entire pan interior (bottom and sides) are parchment lined. In a medium mixing bowl blend together sugar, flour, cocoa powder and salt. Set aside. In a large mixing bowl, combine the eggs, oil and extracts. Beat for 1 minute. Add the dry ingredients. Blend until incorporated. Stir in the chocolate chips (and walnuts, if using). Place in prepared pan. Bake for 30 minutes. Remove from oven and place on a cooling rack. Let cool thoroughly before cutting for neat-cut brownies. But if you just can't resist, go ahead and enjoy a brownie or two with a glass of milk.
