Teddi's pimento cheese
8 ounces cream cheese, softened
1 (4 ounce) jar diced pimento (do NOT drain)
1/2 to 3/4 cup mayonnaise

1/2 teaspoon freshly ground black pepper
OR 1 teaspoon Tabasco hot sauce
8 ounces grated mild cheddar
8 ounces grated American cheese (from the deli - I prefer Land O' Lakes)
Makes 4 cups.
Using an electric mixer blend cream cheese. Stir in undrained pimento. Add 1/2 cup of mayonnaise and pepper. Stir in grated cheeses. Blend well. Add additional mayonnaise (up to 1/4 cup more) if desired. Store in the refrigerator for up to 2 weeks.
