12 littleneck clams, shucked, on the half shell

1 tablespoon each finely chopped red, green and yellow sweet bell peppers

1 1/2 strips bacon, fried crisp and chopped fine

1/2 teaspoon finely minced garlic

1/2 teaspoon finely minced shallots

1/2 cup fresh English muffin crumbs

1/2 cup grated Pecorino

Romano cheese

1 teaspoon fresh thyme leaves

1/2 cup (1 stick) sweet butter, softened

Salt and pepper to taste

Makes 12.

Heat oven to 400 degrees. Combine peppers, bacon, garlic, shallots, crumbs, cheese, butter, thyme, salt and pepper in a bowl. Top each clam with about 1-1/2 tablespoons of the mixture. Bake until topping is slightly browned, about 6 to 8 minutes.
