Smokey black bean, corn and hearts of palm salad

2 (16 ounce) jars chunky salsa

2 (15 ounce) cans black beans, rinsed and drained

2 (15 ounce) cans whole kernel corn, rinsed and drained

2 (15 ounce) cans hearts or palm, drained, cut into small rounds

1 lb. (fully cooked) smoked sausage, diced

2 cups diced sweet onion

2 bell peppers, seeded and diced

2 envelopes taco seasoning

4 cloves garlic, minced

1 tablespoon liquid smoke

2 jalapeño peppers, seeds and ribs removed, finely diced

Chopped cilantro, optional

Combine all ingredients and stir to blend. Best if prepared at least an hour ahead of serving. Makes a bunch to feed a crowd. Recipe easily halves.
