Mango and jicama salsa

1 each, trimmed, chopped: jicama, tomato, leek

1 mango, pitted, peeled, diced

1 clove garlic, minced

1/4 cup chopped cilantro

1/2 teaspoon salt

1 lime, halved

Makes 5 cups.

Combine the jicama, tomato, leek, mango, garlic, cilantro and salt in a large bowl, mixing well. Squeeze lime juice over mixture to taste.

Note: Try this over grilled poultry or fish or as a side dish.
