Aunt Bella's Passover apple cake
4 medium apples (Granny Smith, fuji or gala), peeled, cored and chopped
1/2 cup sugar
Juice of 1 lemon
1/2 cup raisins
1 teaspoon cinnamon
3/4 cup matzo meal
3 eggs, lightly beaten
1/2 cup chopped walnuts
Makes 10 to 12 servings.
Preheat the oven to 350 degrees.
Grease a 9-by-13-inch pan with no-stick cooking spray.
Combine all ingredients and place in prepared pan. Bake about 35 minutes until lightly browned.
