Hot lime and bacon dressing
1 tablespoon bacon drippings
(use bacon as salad ingredient)
1/4 cup finely chopped onion

1/4 cup sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1/3 cup lime juice
Makes 1 cup dressing, 8 (2-tablespoon) servings.
In small skillet, cook onion in drippings until transparent. In a small bowl combine sugar, cornstarch and salt. Stir in 2/3 cup water and the lime juice. Pour into skillet and cook over medium heat, stirring constantly, until mixture thickens. Pour over salad, toss and serve immediately.
