Abbeville cookies

1/2 cup (1 stick) butter

1/4 cup sugar

1 egg, separated

1 cup all-purpose flour

1 cup chopped nuts

Maraschino cherry halves, jelly, candied fruit or chocolate for cookie center

Makes about 2 1/2 dozen.

Heat oven to 300 degrees. Lightly oil a cookie sheet.

Beat butter with sugar until fluffy. Beat in egg yolk and flour just until incorporated. Shape dough into 1-inch balls. Roll in egg white and then in chopped nuts. Place on prepared pan about 1 1/2 inches apart. Bake 5 minutes.

Remove from oven and press hole in center with your thumb or a spoon. (You can put cherries, etc., in indentation now or wait until cookies are done.) Bake 15 minutes longer, until golden.
