1 teaspoon vanilla extract
1 1/2 cups sugar
1 cup all-purpose flour
8 ounces cream cheese, softened
1/4 cup sugar
1 egg, beaten
Dash of salt
3/4 cup semisweet chocolate chips
Makes 20 to 22 cupcakes.
Heat oven to 350 degrees. Fill 20 to 22 cupcake tins with paper liners.
To make the batter, melt the chocolate with the butter. Beat the eggs until thick; add the sugar and vanilla. Beat in the flour. Fold in the chocolate mixture. Spoon into the prepared tins, filling a little over 1/2 full.
To make the filling, mix the cream cheese, sugar, egg and salt until just blended. Stir in the chocolate chips. Drop a rounded teaspoon of filling one top of each cupcake. Bake 25 to 30 minutes, until set and cooked through.
