Traditional cranberry sauce

1/2 cup cranberry juice

1 cup sugar

1 pound fresh cranberries

2 ribs celery, chopped

1 cup walnuts, chopped

Makes 8 servings.

Bring the cranberry juice, sugar, cranberries and celery to a boil. Reduce heat and simmer 20 minutes. Remove from heat, stir in walnuts and cool before refrigerating.

Variations: For cranberry-apple sauce, replace cranberry juice with apple juice, and add 1 cup diced apple with walnuts. For cranberry-orange sauce, replace cranberry juice with orange juice, and add 1 cup fresh chopped orange sections and 1/2 teaspoon grated orange zest with walnuts. Eliminate celery in both.
