Turkey with pear-raisin-ginger sauce

1 tablespoon plus

1 teaspoon olive oil

1 pound sliced deli turkey

1/2 cup golden or regular raisins

1/4 cup white wine

2 ripe pears, thinly sliced

1 piece (1-inch long)

ginger root, minced

1/4 teaspoon salt

Freshly ground pepper

Makes 4 servings.

Heat a skillet over medium heat; add 2 teaspoons of the oil. Cook the turkey until warmed through, 4-5 minutes. (You also can microwave the meat on high for about 1 minute.) Transfer turkey to a plate; keep warm.

Meanwhile, heat remaining 2 teaspoons of oil in skillet; raise heat to medium-high. Add raisins and wine; cook, stirring, until raisins plump, about 3 minutes. Add pears, ginger salt and pepper to taste; cook, stirring, until pears soften, 5-7 minutes. Divide turkey among four plates; top with pear-raisin mixture.
