Tortellini salad

1 (7-ounce) package green tortellini

1 (7-ounce) package white tortellini

About 1 cup vinaigrette, ranch or other salad dressing

4 ounces fontina or other cheese, cubed

1 medium sweet red onion, diced

1 (10-ounce) jar roasted red peppers, drained and diced (or 2 fresh red or green bell peppers, diced)

1 bunch green onions, chopped fine

2 cups additional ingredients (e.g.,

chopped broccoli, zucchini,

artichoke hearts, carrots or

celery; sliced olives, grape

tomatoes or mushrooms; fresh

spinach or herbs; chopped

prosciutto, ham or

crumbled bacon)

Grated Parmesan or Asiago cheese

Makes 12 servings.

Cook tortellini according to package directions. Drain and rinse in cold water. Toss with 1/2 cup of the dressing in large glass, plastic bowl or stainless steel bowl. Add the cheese, green and sweet onion, peppers and additional ingredients. Cover and refrigerate to chill. Just before serving, toss with remaining dressing, sprinkle with grated cheese and taste and adjust seasoning.
