Corn muffins

3/4 cup cornmeal

3/4 cup all-purpose flour

1/3 cup granulated sugar

3/4 teaspoon salt

2 teaspoons baking powder

2 teaspoons margarine or butter

1 egg

1 1/4 cups low-fat milk

Makes 12 muffins.

Preheat oven to 375 degrees. Coat a 12-cup muffin pan with nonstick cooking spray.

Mix cornmeal, flour, sugar, salt and baking powder together in a medium bowl. Cut in margarine until mixture is crumbly.

Mix egg and milk together in a small bowl. Add to cornmeal mixture; mix well.

Pour batter into muffin cups; bake for 20 to 25 minutes or until muffins are golden brown.
