Southwestern salad with ground beef



1/2 pound lean ground beef

1 cup salsa

1 cup red kidney beans, drained

1 (15-ounce can) garbanzo beans (chickpeas), drained

2 cups roughly shredded lettuce

1/2 cup shredded Cheddar cheese

Makes 4 servings.

Cook onions and ground beef in a large skillet until beef is no longer pink. Drain and discard fat.

Stir salsa into beef; cook for 1 minute. Add kidney beans and garbanzo beans; mix gently to combine.

Combine lettuce and cheese in a serving bowl, then divide among 4 plates. Top with beef mixture, dividing evenly.
