Cottage cheese muffins

2/3 cup dark brown sugar

2 eggs, beaten
1/4 teaspoon ginger
1/4 teaspoon nutmeg
1 tablespoon rum
1-1/2 cups cream-style cottage cheese
1/2 teaspoon salt
1/2 teaspoon baking soda
1-1/2 cups all-purpose flour
Makes 16 muffins.
Heat oven to 350 degrees. Line or thoroughly grease 16 muffin cups.
In a mixing bowl, beat butter and brown sugar. Grate the zest of the lemon into the bowl. Stir in the eggs, ginger, nutmeg and rum. Sieve or mash the cottage cheese and add to the bowl. Sprinkle on the salt and baking soda and mix. Finally, blend in the flour. Fill the muffin cups 2/3 full and bake about 30 minutes, or until they are puffed and golden and a toothpick inserted in the center comes out dry.
