Chipotle chili, tomato and apple salsa

1 or 2 chipotle chilies in adobo

sauce, minced with

1 tablespoon sauce from can

1/2 red onion, minced

1/2 green bell pepper, cored,

seeded and chopped

1 ripe tomato, chopped roughly

1 Granny Smith apple, cored,

peeled and chopped

1/2 cup chopped cilantro

Juice of 1 lime

Pinch kosher salt

Makes 6 servings.

Combine all ingredients.

This is a great seasonal salsa that combines sweet crisp apples with smoky spicy chipotle chili peppers. Serve this with chips and crackers or as a sandwich spread. Canned chipotles in adobo are pretty spicy so you may want to only use one.
