Chicken and sausage jambalaya

1 cup mixed precut onions, celery and bell peppers

2 tablespoons vegetable oil

2 bags (8.8-ounces each) precooked rice,

such as Uncle Ben's Ready Rice,

prepared according to instructions

2 cans (14 1/2 ounces each)

diced tomatoes with chilies

1 link cooked andouille, smoked sausage

or kielbasa, about 8 ounces, sliced

1 package (6 ounces) grilled chicken breast strips

or 1 piece (6-8 ounces) prepared rotisserie

chicken, diced

1/2 teaspoon each: dried thyme, salt

Freshly ground black pepper, hot red pepper sauce

Makes 4 servings.

1. Stir together the mixed vegetables and oil in a 2-quart microwave-safe casserole dish; cover with plastic wrap, venting one corner. Microwave on high (100 percent) until softened, 2 minutes.

2. Stir in the rice, tomatoes, chicken, sausage, thyme, salt and black pepper to taste. Cover, venting one corner; microwave on high (100 percent) until heated through, 2-3 minutes. Serve with red pepper sauce at the table.
