1 onion, minced
1 can (15 1/2 ounces) each:
low-sodium chicken broth,
1 to 2 cups cooked chicken,
1 cup corn, frozen or canned
1/4 cup white wine
1 tablespoon herbes de Provence
or other dried herb blend
1/2 teaspoon red pepper flakes
or to taste
Freshly ground pepper
Makes 2 servings.
1. Cook the rice in the microwave according to package directions. Meanwhile, heat the oil in a large saucepan over medium-high heat; add the garlic and onion. Cook, stirring, until golden, about 5 minutes.
2. Add the broth, tomatoes, chicken, corn, the rice, wine, herbs, red pepper flakes and pepper to taste. Heat to a boil; lower heat and simmer 5 minutes.
Note: Ready-to-eat chicken is available in supermarkets, or you can add raw diced chicken and lengthen the cooking time by 10 minutes.
Note: Uncle Ben's Ready Rice, sold in a microwaveable pouch, takes 90 seconds. You will have leftover rice to use at a later date.
