Spiced hot chocolate

1 quart whole milk

1/2 teaspoon ground cinnamon

1/8 teaspoon ground cardamom

1/8 teaspoon ground chile pepper

1/8 teaspoon cumin

1/8 teaspoon coarse salt

1/4 cup sugar

4 ounces high-quality milk chocolate, coarsely chopped

8 ounces high-quality bittersweet chocolate, coarsely chopped

Sweetened whipped cream for garnish

Makes 4 servings.

In a small saucepan, combine the milk, spices and sugar. Bring to a boil over medium-low heat. Pour mixture through a strainer into a large saucepan placed over low heat. Add the chocolate and mix with an immersion blender or whisk until it has melted completely, about 5 minutes. Serve with whipped cream.
