Lemon pork chops
4 or 5 pork chops, 1/2 to 1 inch thick
2 teaspoons shortening or vegetable oil
4 or 5 lemon slices

1 onion, separated into rings
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 cup ketchup
Makes 4 or 5 servings.
Heat pressure cooker. Add oil. Brown chops on both sides. Top each chop with a lemon slice. Add onion, salt and pepper. Combine ketchup and 1/2 cup water; pour over chops. Close cover securely. Place pressure regulator on vent pipe and cook 15 minutes with regulator rocking slowly. Cool cooker immediately. Serve chops with the sauce.
