2 cloves garlic, finely chopped
2 cans pinto beans, drained
1 can whole kernel corn, drained
2 cans diced tomatoes
1 can Rotel diced tomatoes, undrained
2 cans mild green chiles, chopped
2 cups beef broth
1 package dry taco seasoning mix
1 package dry ranch salad dressing mix
Optional garnishes: Tortilla chips,
shredded cheese, sour cream, hot sauce or salsa
Makes 12 servings.
Brown beef. Add bell pepper, onions and garlic. Saute about 10 minutes. Add remaining ingredients and simmer about 1 hour.
