Yuca fries

These fries are crunchier, starchier and sweeter than regular french fries made with potatoes.

2 yuca rootsVegetable oil, for fryingKosher salt, to tasteGreen salsa, to taste

Peel yuca roots and cut in half lengthwise. Bring a large pot of water to boil and add yuca, cooking about 5 minutes or until outer surface can be easily pierced with a knife. Remove from boiling water.

When yuca is cool enough to handle, cut into french fry shapes.

Heat 1 inch of vegetable oil in a heavy-bottomed pan over medium-high heat. Add yuca fries in batches and fry about 5 minutes or until golden brown. Remove with a slotted spoon and season to taste with salt.

Repeat with remaining fries.

Serve with green salsa.
