Steak Schwarma with orzo
1 quart chicken stock
2 cups orzo
1 1/2 lbs. sirloin steak

4 pita loaves
1 tub (8 oz.) regular or flavored (such as
roasted garlic or red pepper) hummus
1 cup feta cheese crumbles
Bring chicken stock to boil. Add orzo and cook according to package directions.
Meanwhile, heat 1 tablespoon vegetable or olive oil in skillet. Season steak with salt and pepper. When oil is hot, place steak in skillet and sear on both sides. Continue cooking about 2 to 3 minutes per side, or until desired done-ness is reached. Remove steak from skillet and let stand, covered, a few minutes.
While steak rests, soften or thaw pita loaves in microwave. Spread pita loaves with hummus.
Slice steak and divide between pita loaves. Top with cheese and serve.
Optional add-ons: Chopped tomatoes, onion and olives for schwarma.
