Date nut bread baked in a can

2 teaspoons baking soda

2 cups boiling water

1 (12-ounce) box pitted dates, diced

1/2 cup (1 stick) butter or margarine

2 cups sugar

2 eggs

4 cups all-purpose flour

1/4 teaspoon salt

3/4 cup chopped walnuts

1 teaspoon vanilla

Makes 5 loaves, 6 servings each.

Sprinkle baking soda over dates. Pour boiling water over dates; set aside until cool. Heat oven to 350 degrees.

Beat butter with sugar; beat in eggs and dates. Sift flour and salt; add to batter along with nuts and vanilla, mixing well.

Fill five well-greased, 20-ounce (No. 2) cans two-thirds with batter. Bake 45 minutes, until center tests done.
