Apple and pecan bundt cake
1 1/2 cups vegetable or canola oil
2 cups sugar
3 eggs, beaten

1 tablespoon pure vanilla extract
3 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking soda
6 cups diced Gala apple (unpeeled)
1 cup pecan halves, toasted, then chopped
Preheat oven to 300 degrees. Grease and flour a 12-cup bundt pan. In a large mixing bowl, using an electric mixer, beat oil and sugar 2 minutes. Add eggs and vanilla extract. Sift together the flour, salt and baking soda. Blend dry ingredients just until incorporated. Stir in apples and pecans. Pour batter in prepared pan. Bake for 1 hour and 45 minutes in center of preheated oven. Cool in pan on cooling rack for 10 minutes. Remove cake from pan and cool thoroughly.
