1 16 oz. package Simply Shortbread cookies, crushed
1/4 cup butter
1 cup confectioner's sugar

1 8 oz. package cream cheese
2 small packages instant vanilla pudding
3 1/2 cups milk (can use skim) 1 12 oz. container Cool Whip, thawed
Crush cookies in a food processor or in a Ziploc bag until finely crushed. In a large bowl, beat butter, sugar and cream cheese until blended. (This really works best with a heavy-duty electric mixer.) Set aside. In another bowl, beat pudding, milk and Cool Whip. Fold this second mixture into the first until completely combined. In your sand pail, alternate layers of cookie crumbs and this mixture. Refrigerate until serving.
