Meatballs with cranberry sauce
1 can (16 ounces) whole cranberry sauce
12 ounces chili sauce, such as Heinz
2 tablespoons brown sugar
1 tablespoon lemon juice
2 pounds ground beef
2 eggs, beaten
1 cup bread crumbs
1/2 cup chopped flat leaf parsley
1/3 cup ketchup
1 teaspoon salt or to taste
1/4 teaspoon freshly ground pepper
Makes 20 meatballs.
1. Heat oven to 350 degrees. Combine the cranberry sauce, chili sauce, brown sugar and lemon juice in a medium bowl; set aside.
2. Mix together the beef, eggs, bread crumbs, parsley, ketchup, salt and pepper in a large bowl; form the mixture into 1-inch balls. Place in a single layer in a baking dish in a single layer; cover with sauce. Bake until the meat is cooked through, 35-40 minutes.
