Fresh lemon zest, removed from lemons with a vegetable peeler
1 quart water
3 cups freshly squeezed lemon juice

2 cups sugar
1 cup honey
In a small saucepan, combine lemon zest and water. Bring to a boil. Remove from heat. Cover and let stand for 30 minutes. Strain and discard zest. Add sugar and honey to hot lemon water. Stir to dissolve. Let cool to room temperature and stir in lemon juice. Add enough water and ice to make 1 gallon.
