Roasted herbed carrots
This is an easy side dish to throw in the oven while you're readying the rest of dinner.
2 lbs. baby carrots2 tablespoons olive oil3 tablespoons freshly chopped herbs such as rosemary, thyme or dill, or 1 tablespoon driedKosher salt and freshly cracked pepper, to taste
Preheat oven to 475 degrees.

Toss carrots with olive oil and herbs and place in one layer on a rimmed baking sheet.
Cook 20 minutes, occasionally shaking the pan, or until carrots are tender and browned in spots.
Season with salt and pepper.
