2 1/2 cups buttermilk baking mix (such as Bisquick)
1/3 cup butter or margarine, softened
1 cup cooked, mashed sweet potatoes
1/2 cup milk

Makes 18 to 20 biscuits.
Heat oven to 450 degrees. Mix all ingredients until soft dough forms. Turn onto surface dusted with flour or baking mix. Roll dough in flour to coat. Shape into ball; knead 3 or 4 times. Roll 1/2-inch thick. Cut with 2-inch cutter dipped in flour. Place biscuits with edges touching on ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown.
